Effects of oleuropein-rich olive leaf extract on the oxidative stability of refined sunflower oil

The aim of this study is to investigate the ability oleuropein-rich olive leaf extract (OLE) improve quality and oxidative stability sunflower oil subjected accelerated thermal oxidation. Oleuropein was major phenolic compound determined by HPLC-DAD with a content ranging from 20.81 32.56 mg·g-1 dry (DE). evaluation in vitro antioxidant capacity OLE showed good scavenging 2,2-diphenyl-1-picrylhydrazyl radical (DPPH) hydrogen peroxide (H2O2) (1.01 0.96 mmol Trolox equivalents (ET·g-1 DE, respectively). enrichment 0.1, 0.25 0.5% (w/v) significantly inhibited thermal-induced peroxidation dose-dependent fashion. 0.25% most effective concentration significant reduction value conjugated dienes 61.4 17.4%. These results indicate that can be considered natural alternative for extending shelf-life polyunsaturated vegetable oils.
